Paul Boutinot started looking for a vineyard location in 1993 that had the potential to create exceptionally fine wine with a distinct feeling of provenance.
It took ten years to concentrate the search on a small region on the Schapenberg's south-facing slopes, which overlook False Bay in the Cape.
The Hottentots-Holland and Helderberg mountains almost encircle Schapenberg, which is Afrikaans for "Sheep Mountain."

It took ten years to concentrate the search on a small region on the Schapenberg's south-facing slopes, which overlook False Bay in the Cape.
The Hottentots-Holland and Helderberg mountains almost encircle Schapenberg, which is Afrikaans for "Sheep Mountain."
However, the region, which is already renowned as being the coolest in the Stellenbosch wine growing region, is seeing an increase in the number of vineyards being planted.
Although vines have been planted on Waterkloof since the early 1970s, the creation of exceptional wines began when the farm was planted in the middle of the 1990s using some of the best available material.
Although the first vintage bottled under the Waterkloof brand was from the 2005 harvest, Paul Boutinot acquired the site soon before the 2004 harvest.
By 2008, a significant new planting and replanting effort had been finished, and the farm's 53 hectares of vineyard now stand.
The World Wildlife Fund's Biodiversity & Wine Initiative honoured Waterkloof with Champion Status in May 2008 for its pioneering efforts in this area. It was decided from the beginning that the other half of the farm should be set aside to preserve the rare and abundant natural vegetation, fauna, and flora (fynbos) situated on the property (click here to find out more).
It was then decided in 2008 to start the conversion of Waterkloof to a fully-fledged organic farm with integrated biological farming. This decision was made logically as a result of these efforts and as a result of Paul's experience visiting vineyards and tasting from a range of biodynamic & organic wine producers around the world.
Finally, a cutting-edge gravity cellar, tasting room, and restaurant were built on the Schapenberg in 2009, and Waterkloof started exporting its distinctive wines across the globe.
